I made another attempt to bake chocolate cake on Friday while the boys were at school.When they're at school its much easier to do baking stuff... i can focus better and think clearly. This time the cake rose up beautifully. It was moist, tender and had little crumbs which i like in a cake. I paired the cake with bittersweet chocolate coffee ganache b'coz i like that bitter taste in a chocolate and it tasted good. This time my hubby enjoyed the cake he said " now this a chocolate cake last week's cake was like having rubber" ha...ha..ha...
Anywayz this is the recipe for the bittersweet chocolate coffee ganache
1 cup thickened cream
2 Tbsp unsalted butter
3 Tbsp granulated sugar
8oz bittersweet chocolate chopped
1 Tbsp Nescafe
Icing sugar (optional if you want it runny don't add icing if you want it thick then add icing as much as you want depending on what consistency you want the ganache to be)
Method:
Heat cream, butter and sugar over medium high. Stirring to dissolve sugar.
Bring to a boil.
Place chocolate and coffee in a bowl .
Pour boiling cream over chocolate. Let sit 10 minutes and stir until smooth.
Keep at room temperature if you want it runny.
Add icing ( if you want a thick consistency before you iced the cake then put the ganache in the fridge for 3 min.)
